Hi Ian,
The "FAST" refers to the Programming Algorithm not the speed of the device, even though you don't need to use the fast algorithm, it makes it much faster to program.
I have successfully used the TI TMS 2732 -25 (250 nS) EPROM for the Character ROM on a 3.375 MHz system, a -30 (300nS) maybe pushing your luck.
